Ingredients
White Quinoa 1 cup (soaked for 1 hr. and cook in cooker )
Olive oil 1tsp tablespoons
Cumin seeds 1 teaspoon
Ginger finely chopped 1 inch
Garlic chopped 1/2 tablespoon
Onion finely chopped 1 medium
Carrot cut into small cubes 1 small
Green peas
Salt to taste
Fresh coriander for garnishing
Method
Heat olive oil in a non-stick pan. Add cumin seeds
Add, ginger and garlic and sauté for a minute. Add onion and sauté till light golden.
Add carrot and mix. Add French beans, mix and cook for a minute. Add peas and mix.
Add boil quinoa, mix and cook for a minute. Add salt and warm on high heat. Reduce heat, mix, cover and cook till quinoa is fully done.
Serve hot garnished with torn coriander sprigs.
